US health officials state that roughly 1% of the population, about one out of ten Americans, suffers from celiac disease (an intolerance to gluten — a protein found in wheat, rye and barley). Today, almost three million Americans suffer from gluten intolerance. Unfortunately, close to 97 percent of these people remain undiagnosed and at risk.

Celiac disease can cause damage to the lining of the small intestine, preventing the uptake of nutrients. Delaying diagnosis has the potential of putting people at risk for various kinds of cancer and other conditions including infertility. The good news is that it is quite easy to diagnosis celiac disease and doing so has many advantages.

Having talked and working with MANY specialists in this area, developing gluten-free recipes, being a mom with concern for all kids and adults not being diagnosed, and now writing two cookbooks, I feel it is important that I do my part to ensure people are informed and know the signs of the various adverse affects that can arise from gluten intolerance or even gluten sensitivity.
